Sampling frequency must be twice the length of the largest frequency of sound being sampled.

Using a sampling period smaller than this leads to aliasing (energy at frequencies larger than the sampling frequency are reflected back into the lower frequencies).

Note: We [see page 6, often] use a low pass filter on a signal before sampling to avoid aliasing.
